Easy Thai Fish Cakes

Fish cakes come in all shapes and sizes, but one's we love the most here at Gandey World Class Productions is the simple Thai Fish Cake.  They are so quick and easy to make, yet pack a tasty punch at the dinner table. With a small selection of ingredients blended with key herbs and spices, the Thai Fish Cake recipe is certainly one to get your hands dirty with!

To make this effortless dish, you will need:

  • 500g (1lb) skinless, boneless salmon fillet
  • 2 tbsp Thai fish sauce
  • 1tbsp Thai red curry paste
  • 1tsp finely grated lime zest
  • 1tbsp finely chopped coriander
  • 1 egg white
  • 1tsp caster sugar
  • 2 spring onions, thinly sliced
  • 2tbsp vegetable oil

Pop all of the ingredients (apart from the vegetable oil, you'll need that later) into a blender and give it a whizz until it's a lumpy paste. You can blend it a bit finer if you like, but we like our easy fish cakes with a little bit to chew on! Take the mixture out and get your hands sticky by forming up to 16 patties out of the goo. This is a great recipe to do with the kids as they can really get stuck in. You can also adapt the spices and add little bits of veg if you like to get their 5 a day, we found that sweetcorn is a delightful addition to the recipe too. 

Fry the fish cakes in the vegetable oil for around 10 minutes, until they are crisp and golden on the outside.  And you're done, ready to eat! You can serve them up with a variety of sides from broccoli and greens to mashed up carrot and potato (our favourite.) 

You can also make the fish cakes into dippy shapes and serve with some ketchup, chilli sauce or even whip up a quick Satay Sauce by combining peanut butter with fish sauce and coconut milk. 

*Top Tip: You can also freeze these fish cakes to cook at a later date, so making them in bigger batches proves more cost effective in the long run!
